With a flavour reminiscent of asparagus and oysters this perennial vegetable produces long thin black tapered roots that grow up to 30cm long. Roots have a black skin and white flesh. Young shoots and flower buds are also edible. Roots can be harvested in the first year or when they are more mature in their second year. Great for soups, stews or eaten alone. Can be baked, fried or steamed. Also known as "Scorzonera", "Spanish salsify", "Black Oyster plant" or "Viper's grass".
