This delicious grey-green kale is pretty enough to plant among the flowers. Much larger than regular kale (60-90cm tall), the stems are purplish and the leaves are shaped like big oak leaves and coloured a velvety gray green. The purple colours become richer after frost, when the flavour becomes sweeter. Surprisingly, the big leaves are very tender and delicious.

Lacinato kale grows 60 to 90 centimetres and has dark blue-green leaves with an "embossed texture". Its taste is described as "slightly sweeter and more delicate ... than curly kale." The Lacinato variety is sometimes called "dinosaur kale" because its bumpy leaves may resemble what dinosaur skin looked like. It has a slightly bitter and earthy taste. Lacinato kale, like most other kale varieties, is usually blanched first, and then sautéed with other ingredients. It is commonly used in pastas and soups, but can also be eaten raw, in a salad.

More heat tolerant than other kales, for a longer harvest period in spring and autumn. Leaves are large, flat, rounded, similar to collards, but very large and with very prominent white veins. The cultural details are the same as cabbages, the only difference is, it is harvested the same way as loose leaf lettuce, you just keep removing the bottom leaves. The plant grows 3 to 4 ft tall on a strong centre stem. The leaves are green and are much better eaten raw. It is an excellent plant leaf to feed poultry.
